Squash is one of those vegetables that you either love, or you don’t. My family happens to love squash in all its many varieties. Here’s one simple way to successfully bake butternut squash in your RV (or home) oven.
What you’ll need:
- 1 Butternut Squash
- 2 Tablespoons salted butter, frozen
- A cast iron skillet or dutch oven
- Aluminum foil
Instructions:
1. Preheat your oven to 400 degrees F. If you are using an RV gas oven, be sure you have a flat cooking stone on the bottom of your oven to help evenly distribute the heat.
2. Using a large knife, but the butternut squash in half lengthwise. Place both halves face up in your skillet.
3. Use a spoon to remove the squash’s seeds.
4. Place 1 Tablespoon of butter in each half of the squash where the seeds were. Cover the entire skillet with aluminum foil and place on the top rack of your oven.
5. Bake for 1.5 to 2 hours, depending on how thick the squash is.
6. Remove from the oven and let it cool slightly. Using a fork and/or spoon, remove the flesh of the squash to a separate bowl (or leave in the skillet if you prefer) and discard the skins. Mash it all together and serve hot.
We like squash with just butter, but you are welcome to add a bit of cinnamon and brown sugar to taste. Enjoy!
